Make sure to keep an eye on your chops and check them a few minutes before the end of that cook time: Pork chops tend to overcook and dry out quickly. Also, keep in mind that if your pork chops are less than an inch thick, they'll cook faster. When you think your chops might be done, poke one with a meat thermometer; when the pork reaches 145 degrees in the center, it's safe to eat.
