What Internal Temp Is Turkey Cooked to When It's Done?

The internal temperature for most poultry is 165 degrees, and turkey is no exception. At this temperature, the meat will be safe to eat but not dry. If you're making a whole roast turkey recipe, you may see a recommendation to shield the breast with foil and cook the dark meat to 180 degrees; you can do this, as the dark meat can take the extra heat, but it can be tricky to avoid overcooking the white meat in the process. Your best bet with turkey of any kind, from a whole bird to ground turkey, is to stick with 165 degrees as your rule of thumb.
