The safe internal temp for pork when it's done is 145 degrees Fahrenheit. You can check the internal temperature by sticking an instant-read thermometer into the thickest part of your pork. At 145 degrees Fahrenheit, you can remove it from the heat, then let it rest for 3 to 5 minutes before you serve it.
However, just because this is the safe internal temperature for pork doesn't mean you can't let it cook for longer to reach your desired level of doneness.
