How Long to Boil Tripe
Tripe is best cooked over a long period of time to soften it and get all of the flavor out of it; this will take a few hours. First, par-boil it for 15 to 30 minutes to soften it and make sure that it's clean. Then, you can put the tripe in whatever cooking liquid you want to use and boil it for anywhere from 1 to 5 hours. The best thing about tripe is that it's almost impossible to overcook it and it tastes best if it's braised and simmered for several hours. Good tripe has the texture of well-washed silk, and that can be achieved after several hours of cooking.
