What's the Internal Temp of a Baked Potato When Done?
If you want to be 100% sure that a baked potato is completely cooked, you can take its temperature: If the center has reached 210 degrees, it's done. Of course, if you can get the temperature probe to slide easily into the potato so that it reaches the center, that's also a good indication that the potato is done.
The good news is that with potatoes, there's no food safety concern: You can even eat potatoes raw if you like. The goal when cooking a potato is to give them a nice, fluffy texture, not to make them any safer to eat.
