What's the Internal Temp for Roast Chicken When Done? Cooking a Whole Bird
Once you've put a whole roast chicken in the oven, it's impossible to tell when it's done just by looking. While the outer skin might be golden and crispy, you won't know if the inside is ready or unsafe to eat until you've taken its temperature. Insert a meat thermometer into the thickest part of the breast and ensure that the temperature of the chicken reaches at least 165 degrees before removing it from the oven. And make sure that your thermometer doesn't touch the bone when you're taking its temperature: This will give you an inaccurate reading.
