What Internal Temp Is Lamb Cooked to When It's Done?
If you're making lamb chops, leg of lamb, or any other whole cut of lamb, you should make sure that its internal temperature reaches at least 145 degrees before serving it. However, ground meats have their own rule: Any ground meat, including ground lamb, should be cooked to at least 160 degrees. Either way, use a meat thermometer to ensure that your lamb is ready to eat. Place the meat thermometer into the thickest part of the lamb's meat without touching the bone, if there is one.
