How Long to Cook Black-Eyed Peas
Dried black-eyed peas can take many hours to cook, but you can speed that up to less than 2 hours, which includes about an hour of active cooking time. First, put the black-eyed peas in a pot of water and bring it to a boil. Then, turn off the heat, cover the pot, and let them sit for an hour. After an hour, drain the black-eyed peas, add fresh water (or whatever cooking liquid you prefer), and boil for 45 minutes to an hour, until they're tender.
