What's the Best Internal Temperature for Pork Ribs?
The internal temp for pork ribs when done is 145 degrees Fahrenheit, technically. Once they've reached this temperature, they are considered safe to eat. However, unlike with some other meats, it's actually recommended that you cook pork ribs well beyond this point. Ribs cooked to 145 degrees are safely cooked, but they're still likely to be tough and rubbery. For the best results, keep cooking your pork ribs until they reach around 200 degrees, which will add flavor, as well as allow the collage in the ribs to break down, making them nice and tender.
