What's the Internal Temp to Cook Salmon to When it's Done?
Salmon should be cooked to an internal temperature of 145 degrees Fahrenheit to make sure that it's safe to eat. But it's all too easy to overcook this delicious fish, so you'll need to be careful. The most forgiving baked salmon recipe uses the pouch method to keep the fish moist: When you cook fish inside of a pouch made of foil or parchment, it steams in its own juices, producing perfectly moist salmon that's tender and flaky and melts in your mouth. You can also cook your salmon until it reaches 135 degrees at the thickest part of the fish, then remove it from the oven or grill and let it rest for 10 minutes. While it rests, the salmon will continue to cook and any juices will have time to incorporate back into the fish.
