How Long to Cook Collard Greens

Collard greens are a tricky vegetable and the cooking time needs to be just right. Undercooked collard greens taste bitter, but overcooked collards are mushy and unappetizing. The perfect in-between time is about an hour of boiling. We recommend taste testing your collard greens after an hour. If they're still too bitter, they can continue cooking, but we recommend keeping an eye on them and testing again every five minutes or so. Some recipes call for much longer cook times at lower heat. Traditional Southern collard greens are usually cooked with ham or bacon and slow-cooked for about two hours.
