How Long to Cook Brisket in the Oven
It can take between 4 and 8 hours to cook brisket in the oven, and you can't rush it: Beef brisket is a tough cut of meat with a lot of connective tissue, so it needs to cook at a low temperature for a long period of time. On average, you should expect to cook your brisket for between an hour and an hour and a half per pound, with the exact time depending on your oven temperature. The maximum temperature you should set your oven to is 325 degrees Fahrenheit; at higher temperatures, you risk burning the exterior and undercooking the interior.
- 225 degrees: 1 ½ hours to 2 hours per pound
- 250 degrees: 1 ½ hours to 2 hours per pound
- 300 degrees: 1 hour 15 minutes to 1 ½ hours per pound
- 325 degrees: 1 hour to 1 hour 15 minutes per pound
- 350 degrees: 1 hour per pound
