The ideal internal temperature for baby back ribs is actually 195 degrees: At this point, the connective tissue in the ribs breaks down, rendering your ribs tender and delicious.
The easiest and most reliable method of taking the internal temperature of your baby back ribs is with a meat thermometer. To get the most accurate reading, insert the thermometer into the thickest section of the meat. Be careful not to touch the bone, as this can give you an inaccurate measurement.
